Gluten-Free Pumpkin Spice Muffins
Ingredients:
- 1 1/2 cups gluten-free flour blend
- 1/2 teaspoon xanthan gum (if not included in flour blend)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- 1/2 cup coconut sugar or brown sugar
- 1/2 cup vegetable oil or melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together the gluten-free flour, xanthan gum (if using), baking soda, baking powder, spices, and salt.
- Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, coconut sugar, oil, eggs, and vanilla extract until smooth.
