Gluten-Free Pumpkin Spice Muffins

Ingredients:

  • 1 1/2 cups gluten-free flour blend
  • 1/2 teaspoon xanthan gum (if not included in flour blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup coconut sugar or brown sugar
  • 1/2 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix Dry Ingredients: In a large bowl, whisk together the gluten-free flour, xanthan gum (if using), baking soda, baking powder, spices, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, coconut sugar, oil, eggs, and vanilla extract until smooth.
  4. Combine and Fill: Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing. Divide the batter evenly among the muffin cups.
  5. Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
